Orange and Fennel Salad

Orange and Fennel Salad
Salads are one of my Hubby's and my favorite foods. Now that Spring is here and a big selection of very fresh vegetables are readily available at markets, Salads of all kinds will be on our menu in the coming months.
This Salad is crisp and fresh. Sweet and savoury. And easy to make as well!
On a plate, lay a couple of large Romaine Lettuce leaves out. They are going to be the plate!
On top of the lettuce, lay a layer of grated Fennel. Love the sweet licorice flavour of fennel!
The next layer is thinly sliced Daikon Radish slices. Love the fresh sharp tangy and slightly spicy flavour of the Daikon.
Next using a sharp knife, completely peel a large Navel Orange and slice it into rounds. Lay these in a layer on top of the Daikon.
Pour any orange juice into a small bowl for the dressing.
Add:
2 TBSP. Olive Oil
1 TBSP Balsamic Vinegar
1/2 tsp. Grated Black Pepper
1/2 Tsp. Salt
3/4 Tsp. Dried Basil. (You can use fresh, I just didn't have any!)
1/2 tsp. Extra Hot Horseradish.
Mix the dressing up well and add:
1 small Purple Onion, thinly slice into rings.
Soak the onion pieces in the dressing mixture. When ready to serve scoop the onions over top of the oranges  and drizzle the remaining dressing over top of the salad.
Crumble pieces of Feta Cheese over top and you are ready to eat!!
You will love it!

Project 52 - Favorites

Favorites
One of my favorite things is an unexpected moment. A moment of grace. Not given lightly and easily missed, these moments can lift your spirits and change the course of your day.
You have to be receptive and open to these moments because they are fleeting. You have to be prepared for them because they won't last long.
Last night at my friend Sally's house on her balcony, we saw a beautiful rainbow, a huge purple shaded evening cloud and I of course was not prepared. No camera!! But maybe I was only meant to sit amongst friends, enjoying some good food and wine, and a rainbow and a cloud. Maybe that was all the prepared for a moment I needed at that moment!
Moments of grace come on silent and cautious feet, trusting a bit to stand and be observed. They are only meant to be observed for if you step toward them to grasp them they disappear.
They don't stay forever. You have to pay attention when they present themselves.
Moments such as these lift our spirits.

Project 52 - Mothers

My own Mother passed away 20 years ago and my own two children, young adults now, live out of town in the next province over, so Mother's Day is not something I celebrate in a traditional way of spending time with your parent or your children.
Instead we, my hubby and I went out and spent the day at the park. We found this mama and her babies at the lake.
Can you imagine having that many babies at once?
Some of the babies needed a good clucking too to keep in line! I love seeing babies at the lake, watching them grow and play.

Coconut Coated Salmon Fillets and Potato Kugel


Coconut Crusted Salmon Fillets
1 1/2 cups Unsweetened Coconut
Salt and Pepper to taste
4 boneless Salmon Fillets
Mango Chutney
Put Coconut into Ziploc bag, add Salmon fillets and shake to coat well. Put coated Salmon onto Parchment lined baking pan.
Sprinkle liberally with Salt and Fresh Ground Pepper.
Bake at 375 degree oven for 10 minutes or until fish is golden brown and flakes easily.
Serve fillets with Mango Chutney.
Coated with Unsweetened Coconut and Salt and Pepper and ready for the oven!!
Potato Kugel
I have always loved Potato Pancakes and over this past Christmas, discovered Kugel when I didn't want to be a slave over the stove and rather spend the time visiting while dinner cooked.
3 Russet Potatoes, grated and squeezed to remain moisture
1 finely chopped Onion (I used a big handful of chives from my garden)
5 large Cloves Garlic, grated
1 egg, beaten
1/2 tsp Baking Powder
1/4 Cup Olive Oil
1/4 Cup Flour
1 tsp Salt
1/2 Tsp Pepper
Coat Glass baking dish with layer of Olive Oil. Mix all ingredients well and spread out into an even layer in the bottom of the pan. Sprinkle with Paprika.
Bake in 375 degree oven for 45 minutes until browned and bubbly and cooked through.
Serve with Sour Cream and chopped Chives.
Tastes like Potato Pancakes without the fuss!

Serve with a nice Green Salad and dinner is served!
